With Thanksgiving day around the corner, I thought I would put together for you some of the blog’s most popular recipes. I love every single one of these. It’s what I come back to every year. For starters, I have Coconut, Ginger and Butternut Squash Soup. These are great to pass around while everyone is waiting for dinner. Next up, Pork Tenderloin with Cranberry-Raspberry Sauce, because let’s face it, a lot of people don’t like turkey. Want something different from your traditional side dishes? Carnival Birthday Party
My big boy Lucas just turned 5-years old on Saturday. I can’t believe it. This year we made a carnival themed party which was his idea. I love it because he was involved in the planning of his own party. The first thing he asked “make my favorite cake in the whole world” He was talking about THIS classic chocolate cake. This has been his favorite cake since he first had it. I don’t blame him, that chocolate cake is just amazing.

I love this recipe, the brownies come out just the way I like it: Fudgy, chocolaty, moist and crusty. I don’t think I will change this recipe. Ever. Why would I? They are just perfect. I tested this recipe a few times until I got the perfect consistency and baking time I was happy with. Not only did I make this recipe a few times but it got the approval of a bunch of kids and that, my friend, is the ultimate test.

As warmer weather approaches, I’m preparing my favorite recipes for when I can finally do some outdoor grilling. But, what’s up with Winter? It’s refusing to leave the East Coast and I swear I can not take one more day of snow. As I wait impatiently for better days, I decided to get us a smoker, yes! I’m excited about that, I think I’ll be smoking everything. Besides that, I also got a molcajete (mortar and pestle) which I love and already put to good use with this beautiful salsa verde that will brighten up your grilling.
Roasted Butternut Squash
Today I want to share a super easy recipe for roasted butternut squash. I love to make this as a side dish instead of the usual potatoes. This goes particularly well with stews or roasts. The minimalist way of preparing this side dish allows us to taste what butternut squash has to offer. This is so simple to prepare, you don’t even have to peel the butternut squash, simply cut it lengthwise, seed it, drizzle it with olive oil, sprinkle salt and black pepper and in to the oven it goes for 40 minutes and that’s that. I told you. Simple. Enjoy your weekend!
