I make molten cake all the time even when nodody is come over to visit, just because, yes, I am a bad girl
sometimes, actually most of the time. I should really control my love for anything chocolate.
Another thing I love about it is the cooking time, it only takes about 12 to 15 minutes depending on the size. Also you can freeze them but if you do, make sure they come to room temperature before
you bake them.
Ingredients:
8oz Bittersweet chocolate
8 tablespoon butter (1 stick)
plus more for ramekins
3 eggs
1/2 cup granulated sugar
1/2 cup flour
1 teaspoon vanilla
Preheat oven to 400 degrees F.
Generously butter four 6 ounce ramekins.
Place the prepared molds on a baking sheet and set aside. Melt the chocolates and butter in a double boiler. In the bowl of an electric mixer, beat the eggs and sugar until pale, about two minutes, beat in the vanilla. Stir in the egg mixture into the chocolate and then add the flour, mix well. Divide the batter among the prepared ramekins and bake for 12 to 15 minutes, the edges should be firm and set but the center will still look a little wet. Serve immediately with vanilla bean ice cream. You can serve them in the ramekins or run a knife around the edges to loosen and invert onto dessert plates.

ReplyDeleteYeah good idea to enjoy it with vanilla bean ice cream. It's also amazing with a few drops of aged balsamic vinegar, right on the plate or on the ice cream.

8oz is 1 cup but NOT in chocolate. In chocolate chips for example 8oz would be about 1 1/2 cups to 2 cups. Is best to weight these type of things to get and exact measurement.

ReplyDeleteYou mentioned you could freeze these and then bake them. Do you pour the batter into the ramekin cover with plastic wrap & then freeze or can you bake them & then freeze and reheat? How do you reheat? I wanted to make these for a party of about 20 friends.

DeleteTried it - not sure if it is because of my oven, 15 minutes at 400F was too long. The bottom was too cooked through and top was not set. Need to try again at a different temp or different rake in the oven.
